Hervé tends the vineyards with a respectful eye. He insists on minimal intervention, only treating the vineyard with pest control when absolutely necessary.
Much of the tillage is done with the use of a horse.
In the winery which was rebuilt in 2003/2004, a sorting table has been put in place to maximize the fruit quality that goes into the fermenters.
No mechanical pumping of the must. Everything is handled by means of gravity flow & the wines are bottled without fining or filtration.
In an effort to have the wines speak of "terroir", the use of new oak is kept to less than 40%.
